Mais la fa\u00e7on de le faire compte plus que jamais.<\/h2>\n<p>Le coronavirus entra\u00eene une situation bien \u00e9trange : distanciation sociale, \u00e9coles et bureaux ferm\u00e9s, restaurants vides. En effet, de nombreux \u00e9tablissements se sont tourn\u00e9s vers les plats \u00e0 emporter. Ils doivent donc respecter les <a href=\"https:\/\/www.gfs.com\/en-us\/ideas\/food-safety-portability\">meilleures pratiques<\/a> pour maintenir la qualit\u00e9 de leurs plats tout en veillant \u00e0 ce que ce qui sort de leur \u00e9tablissement soit s\u00e9curitaire.&nbsp;<\/p>\n<p><strong>La salubrit\u00e9 alimentaire<\/strong><\/p>\n<p>Nous connaissons tous d\u00e9j\u00e0 l\u2019importance du lavage des mains et de la d\u00e9sinfection. Aux \u00c9tats-Unis, les Centers for Disease Control and Prevention ont cr\u00e9\u00e9 un document sur les mesures de salubrit\u00e9 \u00e0 respecter pour pr\u00e9venir la propagation de la COVID-19 (voir aussi l\u2019information publi\u00e9e par le <a href=\"https:\/\/www.fda.gov\/emergency-preparedness-and-response\/mcm-issues\/coronavirus-disease-2019-covid-19-frequently-asked-questions#food\">gouvernement canadien<\/a> ). En voici les grandes lignes :<\/p>\n<p>Les personnes qui manipulent, pr\u00e9parent ou servent des aliments doivent toujours suivre les pratiques s\u00e9curitaires de manipulation des aliments :<\/p>\n<ul>\n<li><a href=\"https:\/\/www.cdc.gov\/nceh\/ehs\/ehsnet\/plain_language\/food-worker-handwashing-restaurant-factors.htm\">Se laver les mains souvent<\/a><\/li>\n<li>Nettoyer les ustensiles et les surfaces apr\u00e8s chaque usage<\/li>\n<li>Garder certains aliments \u00e0 part (fruits et l\u00e9gumes, viande, volaille, produits de la mer et \u0153ufs)<\/li>\n<li>Utiliser des planches \u00e0 d\u00e9couper distinctes en fonction de l\u2019aliment<\/li>\n<li>Cuire les aliments \u00e0 la bonne temp\u00e9rature&nbsp;<\/li>\n<li><a href=\"https:\/\/www.fsis.usda.gov\/wps\/portal\/fsis\/topics\/food-safety-education\/get-answers\/food-safety-fact-sheets\/safe-food-handling\/refrigeration-and-food-safety\/ct_index\">R\u00e9frig\u00e9rer et congeler<\/a> les aliments de fa\u00e7on ad\u00e9quate<\/li>\n<\/ul>\n<p>Les pratiques suivantes sont aussi plus importantes que jamais :<\/p>\n<ul>\n<li>Nettoyage et assainissement des aires de pr\u00e9paration et d\u2019entreposage<\/li>\n<li>D\u00e9sinfection des caisses et syst\u00e8mes de point de vente utilis\u00e9s<\/li>\n<li>Nettoyage des poign\u00e9es de porte et comptoirs o\u00f9 les \u00e9changes ont lieu<\/li>\n<\/ul>\n<p><strong>Emballage des aliments<\/strong><\/p>\n<p>M\u00eame si les restaurateurs doivent imp\u00e9rativement rassurer leur client\u00e8le quant \u00e0 l\u2019innocuit\u00e9 des aliments, ils doivent aussi pr\u00e9server la qualit\u00e9 des plats qu\u2019ils servent. <a href=\"https:\/\/www.gfs.com\/en-us\/ideas\/packaging-portability\">Contenants<\/a> \u00e0 emporter doivent avoir une apparence et un go\u00fbt les plus semblables possible aux plats habituellement consomm\u00e9s sur place. Et l\u2019emballage a une grande incidence sur la qualit\u00e9 des aliments.
