Les cuisines fant\u00f4mes, <a href=\"https:\/\/gfs.ca\/fr-ca\/ideas\/ghost-kitchens-its-not-spooky-you-think\/\">des services de restauration con\u00e7us exclusivement pour la livraison ou le ramassage<\/a>, ont connu une bonne croissance dans les derni\u00e8res ann\u00e9es, notamment parce qu\u2019elles permettent d\u2019\u00e9liminer les d\u00e9penses associ\u00e9es \u00e0 la salle \u00e0 manger.&nbsp;<\/p>\n<p>Cette possibilit\u00e9 incite donc des restaurateurs \u00e0 envisager de poursuivre leurs activit\u00e9s seulement sous cette forme, que ce soit de fa\u00e7on ind\u00e9pendante ou en association avec un fournisseur de services. Les participants \u00e0 un r\u00e9cent webinaire organis\u00e9 par Technomic ont demand\u00e9 \u00e0 Jim Collins, chef de la direction de Kitchen United, comment ces cuisines fonctionnent. Voici ce qu\u2019il en est ressorti :<\/p>\n<p><strong>En quoi l\u2019approche consiste-t-elle exactement?<\/strong><br \/>\nAu d\u00e9but, les gens optaient pour des immeubles bon march\u00e9 dans des zones industrielles. Mais l\u2019exp\u00e9rience a montr\u00e9 qu\u2019un emplacement d\u2019une superficie de 7 000 \u00e0 10 000 pieds carr\u00e9s situ\u00e9 pr\u00e8s d\u2019un endroit assez achaland\u00e9 (passants, touristes, travailleurs, etc.) semble plus logique. Typiquement, on compte de huit \u00e0 douze cuisines individuelles o\u00f9 chaque restaurant a son espace.&nbsp;<\/p>\n<p><strong>Quels services les cuisines fant\u00f4mes offrent-elles?<\/strong><br \/>\nLes gens qui cuisinent sont des employ\u00e9s des restaurants. Le gestionnaire de la cuisine s\u2019occupe quant \u00e0 lui de l\u2019ouverture, de la coordination des commandes et livraisons ainsi que de la gestion de l\u2019espace de ramassage, o\u00f9 les livreurs et clients viennent chercher les commandes. Il peut aussi faire des d\u00e9marches aupr\u00e8s de distributeurs pour aider \u00e0 faire baisser les co\u00fbts d\u2019approvisionnement.<\/p>\n<p><strong>Combien \u00e7a co\u00fbte?<\/strong><br \/>\nCertains restaurants paient des frais fixes et d\u2019autres, un pourcentage des revenus. Les co\u00fbts sont similaires \u00e0 ceux de la location d\u2019un tr\u00e8s petit local dans le m\u00eame quartier. Dans une cuisine fant\u00f4me, la plupart des restaurants vont chercher entre 40 et 60 % des revenus habituels, mais avec seulement 25 % du personnel normalement n\u00e9cessaire.<\/p>\n<p><strong>Quels secteurs b\u00e9n\u00e9ficient le plus de cette approche?<\/strong><br \/>\nLa plupart des cuisines fant\u00f4mes regroupent des \u00e9tablissements de restauration rapide ou de restauration rapide haut de gamme. La cl\u00e9 du succ\u00e8s consiste \u00e0 \u00e9tablir des liens virtuels dynamiques avec la client\u00e8le. Les restaurants qui r\u00e9ussissent le mieux sont ceux qui sont actifs dans les m\u00e9dias sociaux et qui transmettent une identit\u00e9 de marque forte sur leur site Internet. Une approche tr\u00e8s cibl\u00e9e est aussi de mise. Car, ce qui compte r\u00e9ellement, c\u2019est l\u2019interaction avec les gens \u00e0 l\u2019int\u00e9rieur du territoire de livraison couvert.<\/p>\n<p><strong>Les restaurants \u00e0 service complet se tourneront-ils vers les cuisines fant\u00f4mes?<\/strong><br \/>\nAvant 2020, les \u00e9tablissements de cuisine raffin\u00e9e n\u2019offraient pas vraiment de services hors site. Mais, depuis le d\u00e9but de la pand\u00e9mie, beaucoup d\u2019entre eux ont d\u00fb s\u2019adapter pour \u00e9viter une fermeture. L\u2019attrait de ces restaurants r\u00e9side en partie dans l\u2019exp\u00e9rience offerte sur place, ce qui devrait revenir avec le temps. Pour l\u2019instant, ils pourraient cependant tirer leur \u00e9pingle du jeu s\u2019ils ont de bons liens avec leur client\u00e8le et qu\u2019ils proposent <a href=\"https:\/\/gfs.ca\/fr-ca\/ideas\/ensure-staying-power-your-takeout-and-delivery\/\">un menu adapt\u00e9<\/a> \u00e0 la livraison et au ramassage.<\/p>\n<p><strong>Quels menus fonctionnent le mieux?<\/strong><br \/>\nLes cuisines populaires dans les environs sont celles qui risquent le plus d\u2019attirer la client\u00e8le. Mais l\u2019engagement compte aussi pour beaucoup. Ce n\u2019est pas parce que la cuisine mexicaine ou asiatique a la cote qu\u2019il suffit d\u2019en offrir pour r\u00e9ussir.
