Teddy Vasquez, propri\u00e9taire d'un camion de cuisine de rue, a cr\u00e9\u00e9 quelque chose de sp\u00e9cial qui a mis la birria sur la carte culinaire, avec des tortillas tremp\u00e9es dans un bouillon infus\u00e9 au chili et frit sur la plaque. Les p\u00e9pins sont retir\u00e9s, les piments sont grill\u00e9s pour lib\u00e9rer les huiles, puis r\u00e9hydrat\u00e9s dans de l'eau chaude, puis r\u00e9duits en pur\u00e9e. \u00abPour gagner du temps en cuisine, vous pouvez utiliser la p\u00e2te de piment guajillo en bocal\u00bb, explique chef Gonring.<\/p>\n<p>La palette de b\u0153uf est la viande la plus utilis\u00e9e pour la birria, note chef Gonring, mais ce n'est pas le seul choix.
