Autant nous avons appr\u00e9ci\u00e9 de rouler sur le bord de l\u2019eau en Gasp\u00e9sie, autant nous appr\u00e9cions les vall\u00e9es et les paysages rappelant ceux de la Nouvelle-Angleterre que nous offre cette r\u00e9gion. Il faut dire que la r\u00e9gion administrative de l\u2019Estrie affiche un dynamisme \u00e9conomique sans pr\u00e9c\u00e9dent. Depuis quelques ann\u00e9es, tous les secteurs sont mis \u00e0 contribution. Et le secteur agroalimentaire n\u2019y fait pas exception! Nous sommes donc enthousiastes \u00e0 l\u2019id\u00e9e d\u2019aller \u00e0 la rencontre de deux de nos partenaires et fournisseurs privil\u00e9gi\u00e9s, Canards du Lac Brome, \u00e0 Knowlton, et La B\u00ealerie, \u00e0 Cowansville.<\/span><\/span><\/span><\/span><\/span><\/span><\/p>\n<p style=\"line-height: 1.38; text-align: justify;\"><span style=\"font-size: 11pt; font-variant: normal; white-space: pre-wrap;\"><span style=\"font-family: Arial;\"><span style=\"color: #000000;\"><span style=\"font-weight: bold;\"><span style=\"font-style: normal;\"><span style=\"text-decoration: none;\">BROME LAKE DUCKS<\/span><\/span><\/span><\/span><\/span><\/span><\/p>\n<p><span style=\"font-size: 11pt; font-variant: normal; white-space: pre-wrap;\"><span style=\"font-family: Arial;\"><span style=\"color: #000000;\"><span style=\"font-weight: 400;\"><span style=\"font-style: normal;\"><span style=\"text-decoration: none;\">Bord\u00e9e \u00e0 quelques m\u00e8tres par le majestueux lac Brome, la petite municipalit\u00e9 de Knowlton est aussi charmante qu\u2019int\u00e9ressante. C\u2019est ici dans cette municipalit\u00e9 de plus de 5500 \u00e2mes que l\u2019on retrouve les bureaux des Canards du Lac Brome. Apr\u00e8s avoir rachet\u00e9 son partenaire am\u00e9ricain il y a pr\u00e8s de deux ans, le Groupe Mario C\u00f4t\u00e9 est d\u00e9sormais l\u2019unique propri\u00e9taire de cette entreprise qu\u00e9b\u00e9coise comptant pr\u00e8s de 300 employ\u00e9s. Avec une production de 2,2 \u00e0 2,4 millions de canards par ann\u00e9e, Canards du Lac Brome est aujourd\u2019hui un leader dans le secteur de l\u2019\u00e9levage d\u2019oiseaux en Am\u00e9rique du Nord.<\/span><\/span><\/span><\/span><\/span><\/span><\/p>\n<p style=\"line-height: 1.38;\">\n<p style=\"line-height: 1.38; text-align: justify;\"><span style=\"font-size: 11pt; font-variant: normal; white-space: pre-wrap;\"><span style=\"font-family: Arial;\"><span style=\"color: #000000;\"><span style=\"font-weight: 400;\"><span style=\"font-style: normal;\"><span style=\"text-decoration: none;\">Sp\u00e9cialis\u00e9e dans le canard de P\u00e9kin, l\u2019entreprise \u00e9l\u00e8ve ses volatiles dans 14 fermes des environs, dont 80 % appartiennent au Groupe Mario C\u00f4t\u00e9.<\/span><\/span><\/span><\/span><\/span><\/span><\/p>\n<p style=\"line-height: 1.38; text-align: justify;\"><span style=\"font-size: 11pt; font-variant: normal; white-space: pre-wrap;\"><span style=\"font-family: Arial;\"><span style=\"color: #000000;\"><span style=\"font-weight: 400;\"><span style=\"font-style: normal;\"><span style=\"text-decoration: none;\">D\u00e8s notre arriv\u00e9e, nous sommes \u00e9merveill\u00e9s par la beaut\u00e9 des lieux. Construits en 2016, les bureaux de Knowlton sont adjacents \u00e0 la boutique et au centre d\u2019interpr\u00e9tation du canard. Il s\u2019agit d\u2019un lieu unique qui vous permettra d\u2019en apprendre davantage sur cette esp\u00e8ce qui fait tant saliver les Qu\u00e9b\u00e9cois et les Qu\u00e9b\u00e9coises. Catherine Bergeron, directrice des ventes HRI, s\u2019empresse de nous faire visiter les installations.\u00a0<\/span><\/span><\/span><\/span><\/span><\/span><\/p>\n<p style=\"line-height: 1.38; text-align: justify;\"><span style=\"font-size: 11pt; font-variant: normal; white-space: pre-wrap;\"><span style=\"font-family: Arial;\"><span style=\"color: #000000;\"><span style=\"font-weight: 400;\"><span style=\"font-style: normal;\"><span style=\"text-decoration: none;\">Rapidement, notre \u00e9quipe est invit\u00e9e \u00e0 passer \u00e0 table pour ainsi d\u00e9couvrir et d\u00e9guster la chair tendre et go\u00fbteuse de cette d\u00e9licieuse volaille. Le vice-pr\u00e9sident sortant de l\u2019entreprise, Bruno Giuliani, nous a pr\u00e9par\u00e9 une d\u00e9gustation de canard effiloch\u00e9 en salade accompagn\u00e9 d\u2019un parfait au foie gras tout \u00e0 fait d\u00e9lectable pour commencer la rencontre. Par la suite, nous avons pu go\u00fbter \u00e0 l\u2019une de leurs nouveaut\u00e9s, qui m\u00e9rite une mention sp\u00e9ciale vu son c\u00f4t\u00e9 innovateur et son exclusivit\u00e9 dans les services alimentaires, le bacon de canard! Nous avons la chance de go\u00fbter \u00e0 ce produit sur une pizza et dans un hamburger. Dans les deux cas, le produit vaut la peine d\u2019\u00eatre connu, car il donne une touche d\u2019originalit\u00e9 aux plats. Finalement, le dernier plat qui nous est pr\u00e9sent\u00e9 est un produit bien populaire au Canada, soit la poitrine de canard. Tr\u00e8s simple \u00e0 cuisiner, elle est aussi une viande tr\u00e8s polyvalente. On peut la griller, la po\u00ealer, la r\u00f4tir, la confire\u2026 et, dans tous les cas, le canard est une source de fer int\u00e9ressante!<\/span><\/span><\/span><\/span><\/span><\/span><\/p>\n<p style=\"line-height: 1.38;\">\n<p><span style=\"font-size: 11pt; font-variant: normal; white-space: pre-wrap;\"><span style=\"font-family: Arial;\"><span style=\"color: #000000;\"><span style=\"font-weight: 400;\"><span style=\"font-style: normal;\"><span style=\"text-decoration: none;\">Psssst... Jamie et Myriam, propri\u00e9taires de l\u2019entreprise depuis sa cr\u00e9ation en 2016, nous accueillent \u00e0 leur usine de transformation. Apr\u00e8s avoir travaill\u00e9 dans de grandes entreprises et voyag\u00e9 \u00e0 plusieurs endroits dans le monde, Jamie et Myriam se sont lanc\u00e9s conjointement dans l\u2019aventure de d\u00e9marrage d\u2019une ferme familiale et, par le fait m\u00eame, dans le monde de l\u2019\u00e9levage d\u2019agneaux.\u00a0<\/span><\/span><\/span><\/span><\/span><\/span><\/p>\n<p style=\"line-height: 1.38; text-align: justify;\"><span style=\"font-size: 11pt; font-variant: normal; white-space: pre-wrap;\"><span style=\"font-family: Arial;\"><span style=\"color: #000000;\"><span style=\"font-weight: 400;\"><span style=\"font-style: normal;\"><span style=\"text-decoration: none;\">Dans leur troupeau de 750 t\u00eates, on trouve deux races prolifiques, pures races, soit les Romanov et les Arcott Rideau. Ces brebis sont crois\u00e9es avec des races de boucherie (Dorset et Hampshire) afin d\u2019assurer un bon ratio par port\u00e9e et une belle qualit\u00e9 de chair. Pour r\u00e9pondre \u00e0 la demande constante en agneau du Qu\u00e9bec, Jamie et Myriam s\u2019approvisionnent \u00e9videmment \u00e0 partir de leur ferme, mais aussi aupr\u00e8s de partenaires producteurs d\u2019ici.<\/span><\/span><\/span><\/span><\/span><\/span><\/p>\n<p style=\"line-height: 1.38; text-align: justify;\"><span style=\"font-size: 11pt; font-variant: normal; white-space: pre-wrap;\"><span style=\"font-family: Arial;\"><span style=\"color: #000000;\"><span style=\"font-weight: 400;\"><span style=\"font-style: normal;\"><span style=\"text-decoration: none;\">La B\u00ealerie souhaite devenir l\u2019un des plus grands producteurs et transformateurs d\u2019agneau au Canada. Pour se donner les moyens de ses ambitions, l\u2019entreprise vient de faire l\u2019acquisition d\u2019un abattoir f\u00e9d\u00e9ral \u00e0 Yamachiche, dans la r\u00e9gion de la Mauricie. Il faut cependant savoir que l\u2019agneau qu\u00e9b\u00e9cois demeure m\u00e9connu du grand public et qu\u2019il fait encore l\u2019objet de vieilles croyances pas tout \u00e0 fait vraies (son go\u00fbt de laine!). Heureusement, la nouvelle g\u00e9n\u00e9ration de chefs (et l\u2019ancienne aussi) n\u2019h\u00e9site pas \u00e0 travailler des produits alternatifs et des coupes, disons, moins conventionnelles : int\u00e9rieur de ronde en tartare, steak de gigot, collier, agneau confit, etc. Bref, il reste encore bien du chemin \u00e0 parcourir avant que l\u2019agneau qu\u00e9b\u00e9cois ne fasse partie int\u00e9grante de nos menus et soit un incontournable dans notre alimentation. Mais, sans faire trop de bruit, La B\u00ealerie y met tous ses efforts\u2026 et a la ferme intention d\u2019y arriver.<\/span><\/span><\/span><\/span><\/span><\/span><\/p>\n<p style=\"line-height: 1.38; text-align: justify;\"><span style=\"font-size: 11pt; font-variant: normal; white-space: pre-wrap;\"><span style=\"font-family: Arial;\"><span style=\"color: #000000;\"><span style=\"font-weight: 400;\"><span style=\"font-style: normal;\"><span style=\"text-decoration: none;\">De notre c\u00f4t\u00e9, les \u00e9changes savoureux et enrichissants que nous avons eus au cours de cette journ\u00e9e avec toute l\u2019\u00e9quipe de La B\u00ealerie nous font repartir la t\u00eate pleine d\u2019id\u00e9es, de projets et de futures collaborations.
