En plus de plaire aux gens, ils peuvent aider les restaurateurs \u00e0 simplifier les achats et la production de m\u00eame que r\u00e9duire leurs probl\u00e8mes de main-d\u2019\u0153uvre.<\/p>\n<p>Pour \u00e9lever ces plats \u00e0 de nouveaux sommets, il ne suffit toutefois pas d\u2019ajouter des valeurs s\u00fbres au menu. Comme pour toute recette r\u00e9ussie, il faut un brin de nuance et une touche de fantaisie.<\/p>\n<p>Selon David Evans, chef pour la division de l\u2019Ontario de Service alimentaire Gordon, \u00ab\u00adles bons plats, de nouvelles interpr\u00e9tations et un marketing efficace peuvent faire augmenter les ventes et les revenus\u00bb. Il nous propose donc trois fa\u00e7ons de faire des plats r\u00e9confortants la vedette du menu :<\/p>\n<p><strong>1. Raffiner des classiques<\/strong>\u2013 augmenter la value per\u00e7ue des plats.<br \/>\n<strong>2. M\u00e9langer les genres<\/strong>\u2013 marier deux classiques r\u00e9confortants.<br \/>\n<strong>3. D\u00e9construire, reconstruire et m\u00e9langer encore<\/strong>\u2013 s\u2019inspirer de la cuisine du monde.<\/p>\n<p>Par d\u00e9finition, les plats r\u00e9confortants nous procurent du plaisir. Mais pour convaincre la client\u00e8le, une bonne description est tout de m\u00eame essentielle. Am\u00e9liorez l\u2019exp\u00e9rience du client en partant d\u2019un plat populaire et en l\u2019amenant au rang de vedette en quelques mots.<\/p>\n<p><strong>Faible : <\/strong>p\u00e2t\u00e9 chinois.<br \/>\n<strong>Fort :<\/strong> p\u00e2t\u00e9 chinois sauce demi-glace \u00e0 la Guinness et pur\u00e9e de pommes de terre au Stilton.<\/p>\n<p><strong>Faible :<\/strong> p\u00e2t\u00e9 au poulet.<br \/>\n<strong>Fort :<\/strong> Chicken pie, with creamy sauce, French thyme and organic vegetables under a flaky pastry.<\/p>\n<p>\u00ab\u00adIl ne faut pas exag\u00e9rer, pr\u00e9cise David Evans. Il donne l\u2019exemple de la lasagne. On prend le classique italien, on le d\u00e9construit, puis on le reconstruit \u00e0 la cor\u00e9enne.<\/p>\n<p><strong>Sauce :<\/strong> remplacer la sauce bolognaise par du bulgogi ou de la sauce barbecue.
