Selon Sarah Cooper, responsable de la cat\u00e9gorie \u00abCentre de l\u2019assiette\u00bb chez Service alimentaire Gordon, la faute repose \u00e0 la fois sur m\u00e8re Nature et sur une conjoncture d\u00e9favorable.<\/p>\n<p>\u00abLa grippe aviaire de ce printemps a retir\u00e9 plus de 5 millions de dindes du march\u00e9\u00bb, explique-t-elle. \u00abDe plus, la forte chaleur estivale a fait baisser le poids des dindes disponibles, ce qui impose des contraintes suppl\u00e9mentaires \u00e0 la cha\u00eene d\u2019approvisionnement d\u00e9j\u00e0 mise \u00e0 mal. Nous voulons avertir les restaurateurs des p\u00e9nuries actuelles et futures, afin qu\u2019ils puissent s\u2019y pr\u00e9parer et pr\u00e9voir le coup\u00bb, a-t-elle soutenu.<\/p>\n<h3>Dindes moins abondantes et plus co\u00fbteuses<\/h3>\n<p>Les dindes incub\u00e9es apr\u00e8s la p\u00e9riode d\u2019attente requise sont encore dans leur cycle de croissance. La volaille de remplacement n\u2019arrivera pas \u00e0 maturit\u00e9 \u00e0 temps pour la forte demande des c\u00e9l\u00e9brations d\u2019automne.<\/p>\n<p>La p\u00e9nurie ne signifie pas qu\u2019il n\u2019y a plus de dindes disponibles. Mais les distributeurs de toute l\u2019Am\u00e9rique du Nord sont dans la m\u00eame situation : ils n\u2019obtiendront qu\u2019un pourcentage de la volaille r\u00e9serv\u00e9e avant que la grippe aviaire n\u2019ait fait ses ravages. Cette offre limit\u00e9e est synonyme de prix plus \u00e9lev\u00e9s, selon Sarah Cooper.<\/p>\n<p>\u00abCeux qui offrent de la dinde au menu \u00e0 l\u2019ann\u00e9e s\u2019en rendent d\u00e9j\u00e0 compte\u00bb, dit-elle. \u00abLe prix moyen actuel n\u2019a pas \u00e9t\u00e9 si haut depuis cinq ans, et il continuera probablement d\u2019augmenter \u00e0 l\u2019approche des vacances.
