Faites donc du repas un moment agr\u00e9able. Tout commence par la gestion de l\u2019ordre de service.&nbsp;<\/p>\n\n\n\n<p>De l\u2019h\u00f4te au personnel de salle, fa\u00e7onnez l\u2019exp\u00e9rience du repas \u00e0 chaque instant. Mettre les clients \u00e0 l\u2019aise augmente la satisfaction, am\u00e9liore l\u2019app\u00e9tit et cr\u00e9e une attente pour le repas.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-set-a-welcoming-tone\">\u00catre accueillant<\/h3>\n\n\n\n<p>Le premier visage qu\u2019un client voit en entrant dans la salle \u00e0 manger est l\u2019h\u00f4te et ce dernier doit suivre un certain ordre de service :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Accueillir les clients avec un sourire amical et un contact visuel.\u00a0<\/li>\n\n\n\n<li>Saluer les clients avec un mot de bienvenue sinc\u00e8re, en utilisant les titres appropri\u00e9s et le nom des clients si on le conna\u00eet. Par exemple : \u00abBonsoir, Mme Tremblay.\u00bb<\/li>\n\n\n\n<li>Demander comment se passe leur journ\u00e9e (souligner les anniversaires, les f\u00eates, etc.).<\/li>\n\n\n\n<li>Escorter les clients jusqu\u2019\u00e0 leur si\u00e8ge et leur offrir le menu (ou les options num\u00e9riques).<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-create-a-positive-atmosphere\">Cr\u00e9er une atmosph\u00e8re positive<\/h3>\n\n\n\n<p>Votre personnel de salle passe beaucoup de temps avec les clients. En plus d\u2019utiliser le nom du client tout au long du service, voici de bonnes pratiques pour vos serveurs et votre personnel de salle :&nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Se rendre \u00e0 la table dans les deux minutes qui suivent le d\u00e9part de l\u2019h\u00f4te.<\/li>\n\n\n\n<li>Se pr\u00e9senter ou, si on conna\u00eet d\u00e9j\u00e0 les clients, les saluer.<\/li>\n\n\n\n<li>Demander aux clients s\u2019ils sont pr\u00eats \u00e0 commander des boissons.\u00a0<\/li>\n\n\n\n<li>Apporter les boissons \u00e0 la table et prendre les commandes principales, de gauche \u00e0 droite. Dire ensuite \u00abmerci\u00bb, reprendre les menus et demander aux clients s\u2019ils ont besoin de quoi que ce soit d\u2019autre.<\/li>\n\n\n\n<li>Servir les plats dans un ordre logique (p. ex. entr\u00e9e, plat principal et dessert).\u00a0<\/li>\n\n\n\n<li>Servir le plat principal en le nommant au moment de le placer devant le client. V\u00e9rifier s\u2019il y a quelque chose dont les clients ont besoin (p. ex. condiments, boissons, serviettes de table, etc.).<\/li>\n\n\n\n<li>D\u00e9barrasser la table au fur et \u00e0 mesure que les clients terminent. D\u00e9barrasser la vaisselle d\u2019un service avant l\u2019arriv\u00e9e du suivant.<\/li>\n\n\n\n<li>V\u00e9rifier aupr\u00e8s des clients s\u2019ils appr\u00e9cient leur repas.<\/li>\n\n\n\n<li>Anticiper les besoins et demeurer vigilant et \u00e0 proximit\u00e9, pr\u00eat \u00e0 intervenir si n\u00e9cessaire.<\/li>\n<\/ul>\n\n\n\n<p>Lorsque les plats principaux sont termin\u00e9s, passer \u00e0 l\u2019\u00e9tape suivante du service :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Retirer toute la vaisselle et les ustensiles sur la table, \u00e0 l\u2019exception des boissons non termin\u00e9es et de la fourchette \u00e0 dessert.\u00a0<\/li>\n\n\n\n<li>Servir le dessert et le th\u00e9 ou le caf\u00e9, en demandant aux clients s\u2019ils ont besoin de quelque chose (p. ex. serviettes de table, boissons, ustensiles, etc.).<\/li>\n\n\n\n<li>D\u00e9barrasser la table lorsque les clients ont termin\u00e9 le dessert et leur demander s\u2019ils d\u00e9sirent autre chose.<\/li>\n\n\n\n<li>Remercier les clients et leur dire qu\u2019on esp\u00e8re avoir l\u2019occasion de les servir \u00e0 nouveau.<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-recognize-special-considerations\">Tenir compte des particularit\u00e9s<\/h3>\n\n\n\n<p>Lors du service aux clients ayant besoin d\u2019assistance, il faut tenir compte des points suivants :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Placer les dispositifs d\u2019assistance hors du chemin pour le service, mais les laisser \u00e0 proximit\u00e9 et visibles.\u00a0<\/li>\n\n\n\n<li>Servir d\u2019abord les aliments riches en nutriments si les clients ont un petit app\u00e9tit.<\/li>\n\n\n\n<li>\u00c9viter de servir le dessert avant le plat principal.\u00a0<\/li>\n\n\n\n<li>Suivre les directives \u00e9tablies pour aider les clients \u00e0 ouvrir les emballages et \u00e0 couper les aliments.<\/li>\n\n\n\n<li>S\u2019assurer que les clients re\u00e7oivent le bon repas selon leur r\u00e9gime alimentaire et l\u2019\u00e9quipement adapt\u00e9 requis.<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-manage-in-room-dining\">G\u00e9rer les repas en chambre<\/h3>\n\n\n\n<p>Le personnel qui sert les repas en chambre a une grande responsabilit\u00e9.
