Il s\u2019agit de repenser le menu, de normaliser les recettes, de forger une relation solide avec son distributeur alimentaire, d\u2019am\u00e9liorer les commandes et de pratiquer une meilleure gestion de l\u2019inventaire.<\/p>\n\n\n\n<p>\u00abLe pr\u00e9cyclage est un concept nouveau pour les gens, explique Jessie Kordosky. Ce que j\u2019aime, c\u2019est de r\u00e9fl\u00e9chir aux choses avant de les mettre au menu : si nous adoptons ces types d\u2019ingr\u00e9dients, comment pouvons-nous en utiliser le plus possible?\u00bb<\/p>\n\n\n\n<p>En faisant r\u00e9guli\u00e8rement l\u2019inventaire et en planifiant exactement la fa\u00e7on dont les aliments seront utilis\u00e9s, les exploitants minimisent la surcommande et maximisent chaque ingr\u00e9dient.&nbsp;<\/p>\n\n\n\n<p>\u00abVous devez penser comme une pizzeria. La m\u00eame p\u00e2te est utilis\u00e9e pour les pizzas, les n\u0153uds \u00e0 l\u2019ail, les calzones et les strombolis\u00bb, fait remarquer Dan Gervasi. Un autre exemple : \u00abSi vous avez des nachos au menu, r\u00e9duisez en pur\u00e9e la cr\u00e8me sure, le jus de lime et la coriandre en une cr\u00e8me pour d\u2019autres recettes.\u00bb<\/p>\n\n\n\n<p>La formation et les outils permettent \u00e9galement de pr\u00e9venir le gaspillage alimentaire. Avec un taux de rotation \u00e9lev\u00e9 et une main-d\u2019\u0153uvre limit\u00e9e, enseigner \u00e0 votre \u00e9quipe des techniques de pr\u00e9paration des aliments est payant. Lorsque votre \u00e9quipe coupe de mani\u00e8re uniforme les l\u00e9gumes ou les prot\u00e9ines, vous contr\u00f4lez mieux le co\u00fbt des assiettes.<\/p>\n\n\n\n<p>La gestion des portions est \u00e9galement importante. \u00abLes cuill\u00e8res \u00e0 portion et les louches doivent \u00eatre utilis\u00e9es de mani\u00e8re constante, sinon vous pouvez facilement transformer votre bac de 36 portions en 24 portions\u00bb, explique Jessie Kordosky. Par exemple, la p\u00e2te \u00e0 biscuits peut \u00eatre frite en petites bouch\u00e9es ou transform\u00e9e en gaufres, en pains \u00e0 sandwich, en pains plats ou m\u00eame en desserts de type shortcake.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-make-recycling-pay-off\">Rendre le recyclage rentable<\/h3>\n\n\n\n<p>Il est impossible d\u2019atteindre le z\u00e9ro d\u00e9chet. Des coquilles d\u2019\u0153uf aux emballages, en passant par le poisson congel\u00e9 qui a des cristaux de glace, on produit des d\u00e9chets. C\u2019est l\u00e0 que le recyclage entre en jeu.<\/p>\n\n\n\n<p>Au lieu de consid\u00e9rer cela comme une perte, faites-en une opportunit\u00e9 \u2013 une belle histoire \u00e0 partager par l\u2019entremise du marketing et des m\u00e9dias sociaux.&nbsp;<\/p>\n\n\n\n<p>La surproduction ou les achats en trop peuvent \u00eatre donn\u00e9s \u00e0 des refuges ou des banques alimentaires par l\u2019interm\u00e9diaire d\u2019organisations telles que Les Banques alimentaires du Qu\u00e9bec. Les rebuts alimentaires peuvent \u00eatre transform\u00e9s en compost.
