To improve their success, it pays to recognize ways to build sales with effective marketing and menu choices that have a good-for-you and earth-friendly message.<\/p>\n<p>For every menu possibility\u2014from crab salad to lobster tail and fire-grilled tuna to halibut tacos\u2014consumers are paying more attention to sourcing and sustainability. Making transparency part of your menu marketing is one way to stand out from the competition.<\/p>\n<h3>Sustainability on the menu<\/h3>\n<p>Diners already look to fish and seafood for health benefits. Others find it appealing because they won\u2019t dare try cooking it at home. Add to that the feel-good bonus of mentioning sustainability or seafood certifications, and it\u2019s a winning combination.<\/p>\n<p><img decoding=\"async\" class=\"aligncenter\" src=\"https:\/\/cms.gfs.ca\/sites\/default\/files\/inline-images\/03649-Best%20Practices%20on%20the%20Menu-FINAL_0.gif\" alt=\"Infographic listing seafood certifications\" \/><\/p>\n<p>There are several organizations that certify superior management practices designed to protect the marine environment. Using your menu to identify fish and seafood backed by any of these organizations can answer the desire for sustainability and drive sales.<\/p>\n<h3>What matters to them will benefit you<\/h3>\n<p>\u201cVery few operators point out seafood certifications or use ecolabels on the menu,\u201d says Kim Schievink, North American Seafood Category Manager for Gordon Food Service. \u201cIf you name the certification, we can find an item that fits.\u201d<\/p>\n<p>Recognizing you\u2019re committed to sustainability can pay off. According to Technomic Inc.\u2019s 2018 Restaurant Directions report, 58 percent of consumers say it\u2019s important that restaurants are socially responsible. That number aligns with a Marine Stewardship Council report that says 54 percent of seafood consumers are prepared to pay more for certified sustainable seafood products.<\/p>\n<h3>Making it play out on the menu<\/h3>\n<p>Whether you specialize in seafood, have a seafood section on the menu or simply want to satisfy consumers making a personal choice, three core species\u2014salmon, cod and pollock\u2014are go-to favourites.<\/p>\n<p>\u201cIf you\u2019re able to tell customers your coho salmon comes from Alaska and it\u2019s Ocean Wise approved, then you have a story you can tell about your food,\u201d he says.<\/p>\n<p>There are lots of choices available, and Schievink says it\u2019s easy to add a sustainably sourced (for wild-caught products) or responsibly sourced (for farmed products) certification to the menu.<\/p>\n<p>White and tiger shrimp are perfect for Paratha Crispy Shrimp Tacos, a Shrimp Cilantro Chutney Salad or Shrimp with Red Curry Crust. All can be menued with BAP certification.<\/p>\n<p>For the all-you-can-eat fish fry crowd, there are breaded and battered fish selections that offer the certification customers want and the value-added convenience that saves you prep time in the kitchen.<\/p>\n<p>From calamari to clams\u2014both breaded clams and clam juice\u2014there are MSC certified options available. \u201cAll of these products allow chefs to feel comfortable about what they are serving while being a big hit with customers when it comes to sustainability and responsibility,\u201d Schievink says.<\/p>\n<h3>Get Hooked on Clear Choice<\/h3>\n<p>Customers care about the food they eat.
