But it\u2019s all related because no foodservice segment exists in isolation.&nbsp;<\/p>\n<h3>Transparency in education<\/h3>\n<p>Colleges and universities are leading the change in what\u2019s offered to students. They <a href=\"https:\/\/gfs.ca\/en-ca\/ideas\/growing-demand-transparency-0\">demand<\/a> more food information than previous generations. &nbsp;<\/p>\n<p>They want to know where food is sourced, whether producers use sound practices, that animals are raised humanely and waste is handled responsibly. They also demand nutrition data, allergy information and diet accommodations.<\/p>\n<p>\u201cIf they don\u2019t like what they hear, they\u2019ll go elsewhere,\u201d says Gordon Food Service Education Segment Manager Nicole Nicoloff.&nbsp;<\/p>\n<h3>Transparency in healthcare<\/h3>\n<p>Because food is a major part of health, transparency leads to mindful eating. In the patient room and the cafeteria, nutrition and allergy information is increasingly available to encourage healthier eating.&nbsp;<\/p>\n<p>Gordon Food Service Healthcare Segment Manager Dana Fillmore, RD, stresses that people \u201cwant to know exactly what they\u2019re consuming.\u201d Healthcare foodservice is responding in various ways, from installing informational kiosks to highlighting local sources.<\/p>\n<h3>Transparency in restaurants<\/h3>\n<p>Restaurants must watch consumers and transparency. Data about how transparency <a href=\"https:\/\/gfs.ca\/en-ca\/ideas\/clean-foods-whole-foods-and-menu-opportunities\">drives sales<\/a> in commercial foodservice is scarce, says Gordon Food Service Commercial Segment Manager Doug Owens.&nbsp;<\/p>\n<p>While a significant number of restaurant customers say they want transparency, they also want an indulgent dining experience.
