Soon, robot meal prep could lend an entire arm.<\/p>\n<p><a href=\"https:\/\/youtu.be\/6ZbhDs35x3g\">Say hello to Alfred<\/a>, a long-armed robot capable of adapting to most kitchen prep areas and addressing challenges that plague operators most\u2014labour, consistency and safety. Alfred, created by Boston-based <a href=\"https:\/\/www.dexai.com\/meet-alfred\">Dexai Robotics<\/a>, handles large-scale salad production and bowl builds for now. Soon, Dexai founder and CEO Dave Johnson envisions many other menu-building tasks.<\/p>\n<p>We asked Johnson to explain how this tool could be a game-changer.<\/p>\n<p><strong>Who is best suited to use Alfred today?<\/strong><br \/>\n\u201cInitially, it\u2019s going to be in non-commercial or large-scale settings, like healthcare, cafeterias, commissaries, convention centers, catering, grab-and-go,\u201d he said. \u201cIt\u2019s not geared toward high-end dining as much as it is high-volume throughput.\u201d<\/p>\n<p><img decoding=\"async\" class=\"aligncenter\" src=\"https:\/\/cms.gfs.ca\/sites\/default\/files\/inline-images\/Alfred%20Collage%20English_0.jpg\" alt=\"A collage showing Alfred, the meal-making robot, creating a salad, step-by-step.\"><\/p>\n<p><strong>Why would an operator turn to robot technology?<\/strong><br \/>\nHe cites several reasons: labour, speed, accuracy, consistency, costing and safety. \u201cWe help operators with efficiency. They can load up a table with ingredients and let the robot assemble 100 grab-and-go chicken Caesar salads. You no longer need to have a body to do that, the machine doesn\u2019t take breaks or call in sick. \u2026 It really goes to labour savings.\u201d<\/p>\n<p>A skilled worker might be able to assemble a salad faster, but Johnson thinks of it like the tortoise and the hare fable. Humans get bored and make mistakes, but the robot never gets fatigued. While Alfred is making salads, your skilled kitchen team can focus on other tasks.<\/p>\n<p><strong>What about accuracy and safety?<\/strong><br \/>\nThe robot uses a camera and learning modules, so it recognizes the difference between feta and blue cheese, romaine and kale, tomatoes and olives, etc., and always selects the correct ingredient. Built-in scales portion each item according to an operator\u2019s recipe.<\/p>\n<p>\u201cWhether it\u2019s a salad, a harvest grain bowl or a poke bowl, you can track your usage,\u201d Johnson said. \u201cBecause you know much went into each salad, you can compare it to your inventory. You have real metrics on what you\u2019re selling, and you might find gaps like spoilage or bad trimming.\u201d<\/p>\n<p>The robot enhances safety because it\u2019s incapable of using the same utensil on multiple ingredients, reducing the risk of cross-contamination. Operators also get alerts when ingredients have been out too long, helping with HAACP tracking.<\/p>\n<p><strong>Robot technology isn\u2019t cheap, so how will I make money?<\/strong><br \/>\nDexai\u2019s model is a pay-as-you-go service contract, Johnson explained. \u201cThe return on investment is immediate\u2014operators pay a variable cost for each meal the robot makes. Because that cost is lower than what they were previously paying someone to assemble the meals, they are making money right from the beginning.\u201d<\/p>\n<p><strong>Is setup difficult? And what about operational programming and repairs?<\/strong><br \/>\nAlfred unfurls from its storage fetal position and is ready to operate in as little as 15 minutes. The kitchen manager is responsible for designing recipes and entering them into a web portal. Once ingredients are placed in front of it, the robot is responsible for making the recipes.<\/p>\n<p>\u201cWe own every robot, and the contract provides remote service. Most things are fixable by software,\u201d Johnson said. \u201cVery rarely does anything physically break\u2014they\u2019re designed for automotive or electronics manufacturing, so they\u2019re supposed to run for 10 years without any stops.\u201d<\/p>\n<p><img fetchpriority=\"high\" decoding=\"async\" class=\"aligncenter\" src=\"https:\/\/cms.gfs.ca\/sites\/default\/files\/inline-images\/Alfred_Grill_0.gif\" alt=\"Alfred, the meal-making robot, flips a steak on a grill.\" width=\"495\" height=\"495\"><\/p>\n<p><em><strong>Next up for Alfred:&nbsp;<\/strong>Dexai is developing robotics for other kitchen tasks, including grills, ovens, mixers and &nbsp;beverages.<\/em><br \/>\n<strong>What\u2019s next after salads and bowl builds?<\/strong><br \/>\nIdeas on Dexai\u2019s radar include Alfred Grill, Alfred Pizza, Alfred Drinks and Alfred Plating. Johnson is working on a robot capable of turning on a grill, placing and flipping foods as they cook. Topping a pizza is not a huge leap from assembling ingredients on a salad. Don\u2019t be surprised if your coffee barista one day is a robot.<\/p>\n<p>\u201cWe haven\u2019t done a sundae or a banana split yet \u2026 that\u2019s one we should do for fun,\u201d Johnson quipped. \u201cWe love to solicit new ideas.
